When cooking, many people forget about proper care for the spices that they use to season their food. All spices should be stored in a cool dark place and never above a stove. The reason for this is because storing spices in areas where there is a lot of heat, light, or humidity will cause them to lose their flavor.

When certain recipes call for milk or water, try adding some other liquids that you would see fit to experiment with flavors. If the recipe calls for water, switch it up by using a broth, juice, or cooking liquids. Instead of using milk, you can substitute yogurt, buttermilk or sour cream. Using different liquids is an easy way to make an old dish more interesting and more nutritious.

Otherwise ask at the meat counter for a fresh cut or grind if you do not know the time of the last cut.
